Step 1: Put sweet rice wine in a plain saucepan and heat it up for 2 – 3 minutes. Now, add soy sauce, sugar, and unseasoned broth into the pan & bring to a boil.
Step 2: Turn off your oven and cool the newly-prepared dipping sauce.
Step 3: Bring a large bowl, put adequate water, and add dried somen noodles in the boiling water. Make sure to gently stir the noodles while they are boiling. In general, it hardly takes 2 – 3 minutes to boil. If required, you may put a little amount of cold water to prevent overflowing.
Step 4: Drain the boiled somen noodles and cool them under fresh running water or by using an ice bath.
Step 5: Serve the drained cold somen noodles in a skillet. Place the toppings on top of the noodles (like chopped capsicum, tomatoes, parsley leaves, and grated ginger) and serve the dipping sauce in an individual cup.
